Serves 4
Prep time: 5 minutes
Cooking time: around 30 minutes
2 tablespoons of coconut oil or vegetable oil
I large yellow onion, finely sliced
2-3 cloves garlic, crushed or grated
1 pack of Zing spice blend
300g red lentils, rinsed and drained
500ml of water, plus extra if needed
Zest and juice of one lemon
½ can of coconut milk
A handful of fresh coriander, finely chopped
Seasonings
Heat the oil in a heavy based pan over a medium to low heat and add the onion. Cook onion for around 10 minutes (adding garlic after 5) until soft and golden. Add the Zing spice blend, stir well and add lentils.
Cook for another minute and then add water, lemon zest and juice. Bring to the boil and then reduce heat and simmer for ten minutes before adding the coconut milk. Cook for another 10 to 20 minutes, or until lentils are cooked (adding more water if needed). Add chopped fresh coriander and seasoning to taste and serve with rice or breads
