Serves 4
Prep time: 10 minutes
Cooking time: around 30 minutes
2 tbsp vegetable oil
1 large onion, peeled and finely chopped
2 cloves of garlic, crushed
350g Quorn mince
1 pack of Boost spice blend
1 dsp of fresh ginger, finely chopped
1 red chilli, finely chopped (optional)
1 dsp of tomato puree
150g fresh tomatoes, chopped
350 ml of vegetable stock
Seasonings
100g of frozen peas
Heat the oil in a pan over medium to low heat. Cook the onion, stirring regularly for 5 minutes then add garlic.
Cook for a further five minutes then add the Quorn mince, Boost spice blend, ginger and chilli (if using). Cook for 2-3 minutes, stirring constantly then add tomato puree, tomatoes and vegetable stock and seasonings.
Simmer for 20-30 minutes, adding more stock or water if mixture becomes too thick. Add peas and cook for another 5 mins.
Season to taste and serve with rice or breads and a quick raita made of 4 tablespoons of yogurt, 1 tbsp of chopped red onion and 1 tbsp chopped coriander.
