Ingredients:
1 tbsp vegetable oil (15ml)
1 medium white onion, finely chopped (150g)
3 cloves garlic, finely chopped
400g diced lamb
1, 20g packet Go Indian Spice Lamb Curry Blend
1, 400g tin chopped tomatoes
120ml water
1 tbsp fresh coriander, to garnish
To serve:
Cooked basmati rice or warmed naan bread
Preparation:
Heat the oil in a large frying pan over medium heat. Add the onion and garlic, cooking
for 3-4 minutes, or until softened.
Add the lamb, cook, stirring occasionally until browned on each side, about 4-5 minutes.
Add Go Indian Spice Lamb Curry Blend, stirring to combine.
Add the tinned tomatoes and water. Bring to a boil, and let simmer, covered, for 15-20
minutes, or until the lamb is fully cooked and the sauce has thickened.
Transfer to a serving dish, and top with chopped fresh coriander.
Tips
Too spicy? Add a splash of single cream or tinned coconut milk, or top it with a dollop of
natural yoghurt.
Not in the mood to chop your onions? Use a blender or food processor to mince them
into a paste!
