Prep time: 15 minutes
Cooking time: around 10-15 minutes
1 medium cauliflower, broken into chunky florets then sliced
3 tbsp of coconut or vegetable oil
2 cloves of garlic, crushed
½ to 1tsp chilli flakes (optional)
1 pack of Kickstart spice blend
1 tsp of salt and freshly ground black pepper
1 tbsp of desiccated coconut
zest and juice of 1 lemon
4-6 tortilla style wraps or flatbreads
Preheat oven to 200/180 fan/gas 6. Line a baking tray with parchment paper. In a shallow bowl mix the oil with the garlic, chilli flakes (if using), the Kickstart spice blend, salt, pepper, coconut and lemon zest and juice.
Tip cauliflower into mix and stir to coat evenly. Spread onto baking tray. Cook cauliflower in the oven for 10-15 minutes (basting after 5) until cauliflower is cooked but still with some bite.
Warm wraps or Indian breads in the oven for a few minutes. Into the middle of the wrap (keep away from edges) place some crunchy green leaves then spoon over the cauliflower pieces.
Top with a teaspoon of natural yogurt (flavoured with a pinch of the Kickstart spice blend), cucumber slices and some quick pickled red onion Season, roll up wrap, cut in half and serve.
